Paleo Pumpkin Loaf (Gluten Free, Grain Free)

INGREDIENTS:

  • 1 1/2 cups blanched almond flour (or almond meal)
  • 1/2 cup plantain flour (or coconut flour)
  • 1/2 teaspoon sea salt 
  • 1 teaspoon baking soda
  • 1 Tablespoons Ground Cinnamon
  • 1/2 teaspoons Ground Ginger
  • 1/2 teaspoons Nutmeg
  • 1/4 teaspoon Ground Allspice
  • 1/4 teaspoon Ground Cloves
  • 1 cup organic canned pumpkin
  • 1 tablespoon raw local honey
  • 1 tablespoon black strap molasses 
  • 6 pastured eggs

DIRECTIONS:

  • In a mixer combine almond flour, oat flour, sea, salt, baking soda, and spices
  • Add pumpkin, honey, molasses, and eggs and mix until smooth. 
  • Scoop batter into a greased bread pan
  • Bake at 350° for 35-45 minutes, until a toothpick comes out clean
  • Cool and enjoy with some grass-fed butter!
