Grain Free Shortbread Cookies (Gluten Free, low carb)

I think these are my new go-to for any holiday or event where you want to use a cookie cutter! With only 5 ingredients, they are super easy to throw together and the salty sweet combo is crazy good!

Makes: 24-40 cookies (depending on cookie cutter size)

INGREDIENTS

  • 4 1/2 cups almond flour
  • 1/2 cup arrowroot powder 
  • 1/2 teaspoon sea salt
  • 1/2 cup maple syrup
  • 2/3 cup cold grass-fed butter

DIRECTIONS

  1. Preheat oven to 350°F and line a baking sheet with non-stick parchment.
  2. In a stand mixer combine the flour, arrowroot powder, and sea salt.
  3. Next, add the maple syrup and mix until well combined.
  4. Add the cold butter into the mixing bowl in segments, about 1 tbsp each. Mix until a loose ball of dough forms.
  5. Place the dough into the fridge for 5-10 minutes to it is easier to handle.
  6. Place the ball of dough in between two pieces of parchment paper. Roll out the dough into a 1/2 inch thick layer with a rolling pin.
  7. Use cookie cutters of choice.
  8. Place the cut-out cookies onto the lined baking sheet.
  9. Bake for 12-15 minutes until golden brown.
  10. Allow cookies to cool.
  11. Store in fridge in an air-tight container
