Chicken and Red Sauce (Ketogenic, Gluten Free)

Most of my clients enjoy recipes with the fewest ingredients to make cooking more realistic, and I don't blame them! This one is perfectly simple, but tastes like it took hours! 

Makes: 4 Servings

INGREDIENTS

  • 4 Bone in, skin on chicken breasts (pasture raised, organic)
  • 1 15 oz can organic tomato sauce (ideally only ingredient being tomatoes) 
  • 1 Tbsp Olive Oil
  • 2 yellow onions, sliced 
  • 1 Tbsp Italian seasoning
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • sea salt + pepper to taste

DIRECTIONS

  1. Heat a cast iron skillet on medium-high with 1/2 of the olive oil
  2. Season the chicken breast on both sides with salt and pepper
  3. Once the pan is hot, sear the chicken until brown, about 4-5 minutes each side
  4. Add the sliced onions with the rest of the olive oil
  5. In a medium bowl, whisk all seasonings into the tomato sauce.
  6. After the onions have begun to brown, add the seasoned sauce to the pan and incorporate with onions and chicken
  7. Cover the pan and cook on low for about 40 minutes or until the chicken is cooked through.
  8. Serve over cauliflower mashed potatoes with roasted broccolini (pictured here) or other veggie for a low carb comfort food meal!
