Avocado Deviled Eggs (Mayo Free, Ketogenic, Gluten Free)

Although there are some great mayonnaise options out these days, I still like using single ingredients more! Bring these Avocado Deviled eggs to a party to help have protein on hand and avoid the carb overload. These are especially great for Football season!

Makes: 4 Servings or 16 deviled eggs 

INGREDIENTS

  • 8 pasture raised eggs
  • 1/2 avocado, mashed
  • 1 tsp dijon mustard
  • 1 tbsp greek yogurt
  • 1 dill pickle spear, minced
  • sea salt, to taste
  • fresh ground pepper, to taste
  • paprika for garnish

DIRECTIONS:

  1. Hard boil 8 Eggs

  2. Slice hard boiled eggs in half lengthwise.

  3. Remove yolk from whites and set in a bowl.

  4. Add avocado, mustard, greek yogurt, pickle, sea salt, and pepper

  5. Mix all ingredients together, until creamy

  6. Spoon or pipe filling into empty egg whites. Garnish with paprika.
