Carrot Ginger Dressing (Gluten Free, Dairy Free)

This dressing is SO flavorful and yummy, you would never think its so healthy!!

*Recipe derived from Gweneth Paltrow's "Its All Good"

Makes: 2 1/2 cups

INGREDIENTS

  • 2 Carrots, chopped

  • 2 Shallots, peeled

  • 1/4 cup fresh ginger, chopped (peeling-optional)

  • 2 Tbsp sweet white miso paste

  • 1/4 cup rice vinegar

  • 1 Tbsp local raw honey (optional)

  • 2 Tbsp toasted sesame oil

  • 1/2 cup avocado oil

  • 1/4 cup filtered water

  • 1/2 tsp coarse sea salt

DIRECTIONS

  1. Add everything to a high-powdered blender (like a Vitamix) until 100% smooth.
