Enchilada Sauce (Ketogenic, Gluten Free)

Make this sauce and you will want to put it on EVERYTHING. Eggs, tacos, and especially my Chicken Stuffed Poblanos Rellenos

MAKES: 4 cups

INGREDIENTS

  • 1 tsp olive oil
  • 4 garlic cloves, minced
  • 1 -1/2 cups chicken broth
  • 3 cups canned tomato sauce
  • 2 tablespoons chipotle chilis in adobo sauce, chopped 
  • 2 tsp ancho hot chili powder 
  • 1.5 tsp ground cumin
  •  sea salt, to taste 
  • fresh black pepper, to taste

DIRECTIONS:

  1. Heat a saucepan over medium heat, add the oil
  2. Once the oil is sizzling, add the garlic and sauté until golden,  1-2 minutes. 
  3. Add the chicken broth, tomato sauce, chipotle chiles, ancho chili powder, cumin, sea salt and pepper, to taste and whisk until incorporated
  4.  Bring to a boil then reduce the heat to low and simmer, uncovered for 7-10 minutes. 
  5. Enjoy!
