Jumbo Pumpkin Spice Muffins (Gluten Free, low-carb)

Makes: 5 servings (jumbo) or 10-12 (regular size) muffins 

INGREDIENTS:

  • 1 1/2 cups blanched almond flour (or almond meal)
  • 1/2 cup oat flour (can make by adding oats to food processor)
  • 1/2 teaspoon sea salt 
  • 1 teaspoon baking soda
  • 1 Tablespoons Ground Cinnamon
  • 1/2 teaspoons Ground Ginger
  • 1/2 teaspoons Nutmeg
  • 1/4 teaspoon Ground Allspice
  • 1/4 teaspoon Ground Cloves
  • 1 cup organic canned pumpkin
  • 2 tbsp maple syrup
  • 1 tablespoon black strap molasses 
  • 3 pastured eggs
  • 1 tsp pumpkin spice (can also use cinnamon)

DIRECTIONS:

  • In a mixer combine almond flour, oat flour, sea salt, baking soda, and spices
  • Add pumpkin, maple syrup, molasses, and eggs and mix until smoothe about 2 minutes
  • Line Jumbo muffin pan with 5 large muffin cups (if doing normal size muffins, use 10-12)
  • Pour batter into muffin cups, about 1/2 way full. 
  • Sprinkle with pumpkin spice 
  • Bake at 350Β° for 20-25 minutes, until toothpick comes out clean
  • Cool and enjoy with some grass-fed butter!
  • Note* You can also make this into a loaf, just extend the cooking time as needed to have the toothpick come out clean
