Banana Oatmeal Chocolate Chip Cookies (Gluten Free)

I made this specifically for my husband who is a self-admitted cookie addict. I couldn't bear to make him any more treats full of organic sugar and organic flour....organic doesn't mean healthy! Luckily, these were a home run. Problem solved!

MAKES: 14 Cookies

INGREDIENTS

DIRECTIONS

  1. Preheat the oven to 350ºF and line 2 baking sheets with parchment paper

  2. In a medium bowl, mix the oats, almond meal, baking soda, and salt. 

  3. In a separate bowl, mash the bananas/plantains, and beat with the melted butter until fluffy. Stir in the egg and vanilla extract, until smooth.

  4. Add the dry mixture to the banana/plantain mixture, stirring until well combined. Fold in the chocolate chips.

  5. Using a small cookie scoop, place scoops of dough on cookie sheet, 2-3 scoops to a row.

  6. Bake at 350ºF for 15-20 minutes, until golden around the edges. Allow to cool a bit and enjoy! Store leftovers in an airtight container in the refridgerartor.
